Content analysis of scientific productions in the field of nutritional fortification of animal products (2003-2013)

Abstract

Abstract Introduction: Non-communicable diseases are a leading cause of death in the world; a variety of strategies to combat these diseases to be adopted. Animal products enrichment is one of the strategies. Nemours researches have been done in this area. Aim: This study aimed to survey researches in the field of animal products enrichment by Folic acid, Se, Vit E, Omega 3 and 6 and CLA fatty acids during 2003-2013. Method and Materials: The kind of this study is Meta-analysis which has been done using content analysis of published articles in 4 main journals in the area of animal sciences and 2 main journals in the area of nutrition sciences. Statistical analysis was done with the MEANS procedure of SAS software (Version 9.1). Results: A total number of 281 articles were matched with the inclusion criteria. 105, 139, 39 articles respectively were about enrichment of meat, milk and eggs with nutrients was studied. Most percentages of articles belonged to increasing levels of omega- 3(60.14%), omega- 6 (46.96%) and CLA (53.38%) fatty acids. Countries with high economy were the main producers of articles. USA with the contribution of 38.1% and 41.72% of articles was most productive country in the fields of meat and milk enrichment, also Canada with contribution of 30.77% of articles was most productive country in the fields of egg enrichment. Iran had only one article in the field of milk enrichment. The highest level of nutrients in enriched products, by product type was different. The research of different countries had different results.

Conclusion: Enhancing the polyunsaturated fatty acids was the main objective of animal products enrichment's research. Iran has little articles in this field and has a remarkable gap with most productive countries. It's necessary to make appropriate policies for research in this field in Iran.
